For a number of years, it was a party of two, John and his brother Jason, now Director of Operations. “Jason’s the backbone behind the scenes,” notes Se- rock. “Our staff has grown to 110, and 40 to 50 people take part in each event. There are NO sub- contractors!” Serock, who oversees all weddings, is proud of his staff and their talents. For every wedding, there is a planner. To maintain the vigor that should accom- pany an event, employees are assigned to different venues each month. “I want the staff to enjoy their jobs,” he remarks. “I hope our business will be their careers, not stepping stones. Traditionally, catering is very transient, yet some of our employees have been with us from five to 12 years. I think this longevity, in part, stems from working smart, not hard.” Serock extends his reach beyond the staff. His expanded team includes a network of support com- panies, including florists, entertainers, photogra- phers, videographers, and others he recommends on a regular basis.
